Usually you don't want to use prime salmon for burgers, but I had an idea. I just got a nice limit of Kokanee, and ya, they are only 10"ers. Kokanee fillet is great (peppers, onion, spice), and kokanee pizza is good. BUT....what about kokanee burgers?? Interesting thought. What a great light healthy alternative to the norm. here it is......WOW!!

10 small kokanee fillets (pre-cooked, skinned)
2 eggs

mix/mash salmon meat and egg. Add 1.5-2 cups Shore Lunch Original fish batter. Continue to mix/mash. (make it not to sticky, but not crumbly)
Make patties. I got 4 nice patties.
Refrigerate or freeze.
spice to taste when you throw them babies on the apple wood grill.

Unbelievable. Why haven't I heard of this yet?? Great mammalian burger alternative!!! (very nutritious also)

I have caught many fish in my life. The most exciting? The next one.....

Wow, that sounds so delicious. Where can I catch kokanee? I wouldn't mind trying it with any salmon though.

I have done this with fresh king salmon, except we just sliced a filet that what shaped like a burger, ad some mayo, and thats all you need.
The salmon burgers you get in the store just flat-out suck.

Ive done this with Sockeye Salmon and king/coho too.Even at the Mariners Ivars sells salmon burgers. It would work well with Chum if done real soon after catching them.I tried the Costco Salmon burgers and Crappie master is correct they are yukkers.Nice idea with trout A thumbs up for R&R...

When youre up to your rear end in alligators, its hard to remember that the initial plan was to drain the swamp.

Your right on Derrick-k. Number one....store bought anything sucks if you can make it yourself. Chef
