Alder Smoked Pork Medallions Options

I made this meat for my friends whom I lived with before I moved out, and they asked me if I could stay longer.

Bought 10 lbs of boneless pork loin at Ballard Market @ 1.99/lb. Had the meat lady slice the pork loin into 1/4" medallions. Salted/ peppered/ threw in a small handful of brown sugar, sprinkled on dried parsley, and poured about 1 cup of fish sauce and 4 cups of red wine vinegar on top of medallions. Crushed half a head of garlic and threw everything into a pot and stirred it all up. Marinated for two days, flipping meat occasionally. Grilled the meat lightly and then started smoking it right in the BBQ'er with soaked alder chips. Did this for about 1.5 hours.

This meat went great with some garlic mashed potatoes.

Man, I'm getting hungry just thinking about it.

That sounds too good bout now.I just finnished my Smart Ones t.v dinner.I want to cry..........
